Ingredients:
- 1 cup chopped Sweet potato or pumpkin
- 1 cup peeled and chopped beets
- 1 cucumber (peeled and chopped)
- 1/2 avocado
- 1-2 cups salad greens of choice
- optional toppings: micro greens, hemp seeds, dressing
Instructions:
- Preheat oven to 400 degrees F
- Line a cookie sheet with parchment paper (or use a non-stick pan) and evenly spread out sweet potato and beets
- Spray with avocado oil until lightly coated
- Once preheated, place sheet in oven and cook for about 20-40 minutes (depending how large veggies are chopped) until fully cooked
- To plate bowl, add greens as base (I like spinach or mixed greens), next add sweet potato, beets, and cucumber, and top with mashed avocado and any additional toppings
- For a dressing, I recommend lightly drizzling tahini, Olive oil, or using the mashed avocado as a “dressing” to coat veggies
